I have had then do all sorts of things. Keep going in the same direction, turn around and run away, and die right there. I will say that 95% of the time if they are hit, especially a buck, they won't raise their tail.
I had a buddy years ago that shot a buck with his bow and he jumped and mule kicked and ran into a nearby thicket. He said the does scattered but then went back to feeding. He said he thought he missed him. Then after watching him stand there looking around for 30 seconds he fell over and died.
