Roasted Okra

If you like Fried Okra try this. Cut it up in 1/4" to 1/2 slice's. Place in bowl, and add salt, black pepper and drizzle a little bit of EVOO(Extra Virgin Olive Oil) and mix by hand. Spread out on a pan lined with aluminum foil sprayed with Pam. Bake @ 425 for 20 minutes. That's some good stuff right there!!!

tried it last night- it's great thanks!


we also put on some Parmesan cheese and a sprinkle of rosemary before roasting

been doing broccoli and brussel spts for a while like that. If you want a little heat, chop up some dried chile's.

I roasted some frozen okra yesterday and it was goooood...year round okra in your grocer's freezer section...

mushroooms and asparagus are excellent too and I sometimes add dry italian seasoning to it also
