Had this last night. Easy to make. I subbed a roasted poblano pepper for one of the two roasted red bell peppers. Gave it just the right extra kick. Looking forward to some leftovers for lunch today.

Awesome idea. Poblanos are far under rated, and one of the best tasting peppers out there. And to me, bell peppers have changed in flavor in the past few years, especially the green ones. I can't remember the last time I had one that wasn't just bitter.
