I've been threatening a sausage party for a long time.....I really need to bust out all the packages I have in the freezer labeled "grind"
Biggest issue is getting the pork to mix. I don't want to get plain ol' grocery store pink pigs just to mix with some fine acorn-eating Hatchie Bottoms venison.
I actually used beef bacon instead of pork for these. If you can find some it's a really good substitute for pork bacon and lets the game flavors come through without being overpowered.
Interesting....but I'm looking for some high quality meat to go with the venison, not just plain old grocery store stuff. I get some heritage pork from a farm in Como, MS, but that's an hour drive each way.
