Dodge Man makes a lot of his own hot sauces. I'm sure he'll be chiming in soon on this one.

I really like jalapeño hot sauce. I make red and green and use a lot of it. If you like it hot leave the seeds in, if you want it mild take most of the seeds out.

Im sure you can use the base Recipe for any pepper hot sauce. With the supper Hots most recipes say to add some type of fruit or tomatoes to dilute the heat so it is not unusable. But I guess it is all up to your heat tolerance.

Well Here is what I came up with and recipe. ..
First attempt ever at making hot sauce... Peach and Habanero.... turned out really good.
Basic recipe and steps. I did add 2 fatalis in with the 8 habs.
Ingredients:
8 habanero chili peppers
1 medium onion, diced
3 garlic cloves, diced
1 tablespoon extra virgin olive oil
I can of peaches syrup as well
2 cups water
2 teaspoons lime juice and zest the lime
2 teaspoons vinegar
Salt to taste
Cooking Directions:
In large skillet, saute onion and garlic in oil until soft.
Add water and peaches. Bring to a boil.
Reduce heat and simmer until soft.
Remove from heat and transfer to a food processor.
Add the peppers, lime juice, vinegar and salt. Puree until smooth.
Put back on and simmer reducing to the thickness you desire.
