I got a dehydrator around Christmas and am getting into jerky making. I've tried three different whole-muscle recipes. So far, the "Queen Mother of all Jerky" (from the Meateater cookbook) and Hank Shaw's chipotle jerky recipes are my favorite. I also have a grinder and plan to make some ground meat jerky soon. Any favorite recipes out there that you'd care to share with a jerky nube?

Easiest and one I like the best is
1 bottle of allegro hot / spicy marinade
1/3 cup brown sugar
1/2 teaspoon curing salt
2 pounds sliced deer
24-48 hours in marinade before dehydration
I also add a little extra red pepper flakes after putting on the rack.
Simple and always good without being extremely salty.

This one is hard to beat and easy. I use a little less brown sugar and add crushed Cayene for a little more warmth instead of the pepper flakes but same concept.

I use a marinade bottled locally called "black oaks" good stuff

I've never tried the prepackaged spices made specifically for jerky but coworker brought some jerky that was amazing

He bought whisky pepper at Walmart. That stuff is goooood. He had a couple other ingredients that I can't recall

I grind it up and then marinate. Shoot it on the tray with a jerky shooter. Tender and full of flavor. A1 steaksauce is a good addition to try.
