sweet taters

how do you start sweet taters from left over taters from last year. the ones i grew last year was from couple years ago and was sprouting on there own and i pulled them off and put in jar of water to make roots.so how is the best way to make them start sprouting?

My Grandfather used to put sweet taters in a bed of sawdust and keep it wet. He then had me pull the slips from the sweet taters when they sprouted. I would put them in bunches of 100 and use a rubber band to hold them together and he would sell them at the flea market.
