Tried something new yesterday on the pit boss. These things are excellent. A mixture of Colby jack cheese, cream cheese, sausage and jalapeños. Wrapped with a thin sliced chicken breast seasoned with bbq rub. Then wrapped in bacon. Smoked for about 2.5 hours on 250 deg., then brush on bbq sauce.
