The first year we had the "3 does per day" limit, I did it once. Never again! Dang, that was a lot of work. I was glad my back made it through without permanent damage…
It's definitely a lot of work and not the fun part of hunting! If I didn't have a large family I probably wouldn't.

I've done the three several times (and often make it my goal).

This does a couple of things:
1. Frees up other days for hunting that would've been spent processing
2. Reduces pressure on a particular area. I'd rather kill three and then evacuate than hunt four or five times.

Browning Spec Ops Elite HP5 (and the HP4 is just as good).

The differences between the two are the HP4 uses more of a flood flash (covering the whole area), while the HP5 has more of a spotlight flash that pushes further into the dark but is a little under-illuminated at the edges. The HP5 also has better, truer color in daylight.
