Local Kroger has organic lamb shanks on clearance and I thought I would run back and pick one up. I am guessing that braising it will be the way to go but was looking for any ideas or tips on braising. Have never done it before.

Thanks in advance.

My natural second word to hearing "braised" is "shanks"

We live off lamb shanks when they're on sale. Love 'em

May be a little late to this but one of my favorite shank methods is braised in tomato sauce and served over polenta. I had it in some restaurant in I think Savannah or maybe Charleston. I played around with the method at home and it's an okay substitute. Flour and crisp up the shanks in a pan, toss in the tomato sauce and add whatever herbs you want. Put the shanks in an oven safe pan and braise until they're so tender you can't stand it. Spoon that over some polenta and have some rosemary bread nearby to help with the extra sauce. This recipe has gotten me through several date nights with excellent results.
