1 lb grnd beef
1/2 cup chopped onion
1/2 tspn salt, pepper
1 tblsn chili powder
1 tspn paprika
brown meat with ingredients
2 10 oz cans red enchilada sauce medium heat

preheat oven to 350

1/3 cup colby jack cheese
3 tblspn above sauce
2 pats of butter
stir above into browned meat

4 tbspn sauce in bottom of 9 x 13 dish spread

10 small flour tortilla wraps
divide meat evenly among wraps
roll close wraps
place in dish with overlap down
pour remaining sauce over all
1/2 cu sharp cheddar shreds over the top
5 slices of pepper jack cheese
apply black olives to taste

bake for 10 min

top with diced onion 1/4 cup and sour cream all you want

enjoy

some use cumin but not in this house cumin is for folks who dont like the other ingredients

That's similar to how the Boss Lady does hers, but she also coats the tortillas with sauce on both sides before filling; she also puts cheese inside each enchilada.
