High temp cheese?

thats awesome looking spur hunter.how much money does it average per pound to make

The kit runs $20, Pork is about $15, japelenos are about $10, two pounds of cheese is $5, red pepper $3. This makes 30 lbs or 10 3lb logs.

After you mix all that together do you grind it again? I the past I have used a grinder to stuff my casings and I think the cheese may be ground to small.

I do not, I use a vertical stuffer. After you go vertical, you will never use a grinder to stuff again, I'm serious.
They come with three stuffer tubes, I use the largest one for these summer sausages since they are about 2.5" tubes so you really cant make the cheese too large.

Northern tool is another source for vertical stuffers and was about $105 the when I bought mine a couple years ago.

Wow, that calls for a lot of pork ratio. The High Mountain recipe calls for only 3 lbs pork for 12 lb venison.
