Did this for our church small group guys Saturday night. The rub really set this off. Ancho Chile with Black Rifle Coffee Company Sniper's Hide roast. This will be my go to rub going forward.

This rub was really good. Here is the whole thing.
2 TBSP finely ground coffee
2 TBSP ancho chile powder
1 TBSP smoked Paprika
1 TBSP brown sugar
2 tsp garlic salt
1/2 tsp Pink Himalayan salt
1/2 tsp ginger
1/2 tsp dried oregano
1/2 tsp mustard powder
1/2 tsp cracked black pepper
1/2 tsp cayenne pepper.

I got the Weber up to 600 degrees with charcoal and a few chunks of mesquite and cooked to medium rare.

We eat a lot of elk and I've yet to be pleased with any smoking attempt I've made. The best way is a super-hot grill and cooked to medium rare. Had some tonight, in fact. Mmmmmmm. Save the smoker for the beef and pork, IMO.
