Around Christmas I received the meat from the moose I killed in Newfoundland in September....the processor there sends it via frozen truck line and drops it off at your choice of frozen storage facilities around the country...the closest location to me was in Cartersville, GA.

I shared meat with my brother for bringing it to me from Georgia, my daughter because I love her and my grand-kids, Fairchaser 'cause he coerced me into this excursion in the first place and TNRifleman because he's just a good dude.....everyone loves it....

Moose meat is so good that my wife is asking me when I'm booking another trip....I told her I wasn't sure I could afford another trip since I had to endure so much of her "grudge spending" after sneaking the last trip through the finance department without appropriate management approval.....

I LOVE to eat animals... how would you rank animal cuts? ( I'm talking steaks)

1.. grass with grain supplemented angus beef

2.. elk... almost like grass fed beef... excellent flavor, no marbling, at times a little tough

3...antelope... rich, almost sweet meat. No gamey flavor if meat removed off the carcass asap after the kill

4... lamb... yum

5...whitetail... if dry aged, very serviceable as pan seared steaks...

I've never eaten mulies or exotics, heard nigali and axis are incredible
Going to eat moose next year after my Alaska hunt
Chicken!

I just read thru this entire thread, and agree with most.

But am truly surprised no one mentioned beaver.

Also, it's not just the type game, but how it's been prepared.
I've had bear roasts I couldn't tell from beef,
and bear roasts that weren't edible.

Squirrel is another critter that didn't get honorable mention on this thread,
but I find squirrel to be very similar to chicken thighs.

Beaver is good. My best friend has a huge bbq every June, winter is spent collecting critters for the freezer then on to the coals after the hog is done.
Every critter is then shredded and chopped like the pork, placed into serving dishes and labeled. Rabbit is the first to disappear but Beaver is a close second. Muskrat, raccoon, squirrel are always on the menu as well.
Honestly, once cooked on an old school bbq pit, these critters all sorts taste the same. It's more of a texture and fat content difference.

My daughter loves squirrel n dumplings. How anyone could tell the difference between chicken thighs and squirrel cooked that way, without knowing, is beyond me. Except the squirrel simply has more flavor complex, imo.

Since you said steak.

1- Antelope heart
2- Elk
3- Moose
4- the rest of an antelope
5- Whitetail

But my favorite wild game is bbq groundhog the one thing I wish I would have learned how to cook the way my grandmother did ( I can't make coon taste as good as she could either)

So... on my last AK moose trip, one of the locals had already killed 4 bulls by the time we got there and they gave us 3lbs steaks to take to the bush...

It's no 1, hands down.

Now sure, it's possible we were starving in the bush, and it's also possible we sautéed them in foraged bolete mushrooms... but I was completely.satisfied yet wanting more after eating 1.5lbs of pure meat at once!
