Wild Turkey Chest Recipe????

Yeah - a buddy of mine killed two old toms last spring; brought me a chest and wants me to cook it for him. He said it was an old one and the breast probably is tough.

I'm gonna brine it first, rinse real good... then cook it. I figure I'll need to bake it low and slow to help it be tender; and as both my buddy and I are on low-fat diets now...I don't want to mess up an otherwise heart-healthy meal with creamy sauces, gravey, etc.

Anybody got a good tried and true recipe with the above conditions?

Slice it into strips, marinate it in Italian dressing and grill it.
If you don't overcook it, it won't be tough.


My most favorite recipie is so good it will literally make you hurt yourself eating so much.
Definately not heart healthy though.

So just invite Forrest down to eat it.

Ruger is right. I just slice it and roll in
flour, salt and pepper just like fish fillets.

And, they actually make good poppers if you can
get them sliced thin enough

That sounds good I am going to take out a breast tonight and start marinating it in Italian dressing ........


going to fire up the grill in couple of days ......

Brine it real good in a citrus brine for 24-48 hours. The acid in the citrus does a good job of not only producing great subtle flavor, but also helps to tenderize the meat. Then cook or smoke it to a temp of 150 and pull it out. (it will continue to cook and reach an internal temp of around 160)

salt
onion slices
orange juice
lemon juice
grapefruit juice
bay leaves
garlic
thyme

Slice in inchwide strips. Marinade in Jack Danniels and two beaten eggs for 30 minutes. Sheke well in season flour and fry like chicken until goldne brown. Remove and drain well. Cpver with freshly grated cheddar cheese and sliced jalapenos. Place in microwave until chreese melts. serve
