venison sausage/pasta dish

I made quite a bit of sausage last summer from left over venison in the freezer, I had two 6-8 ft rope coils left in the freezer.

I am baking one of them now, later (after it cools) I am going to angle slice it and set aside. Cook up some onions, red/green/yellow bell peppers and cross slice a few portabello mushrooms in olive oil and garlic.

When that is just about cooked down, I will add the sausage and mix.

Serve over penne pasta and sprinkle crumbled feta cheese on top.............side of romaine salad and all is good.

Well, sausage is out of the oven and cooling.........man, the house smells great right now.

I had the vacuum bag marked "cummin/mace", must be I made a coil with those spices and don't remember..............smells awesome.

I had to alter my original dish due to a mistake on my part, but improvised and it came out just great.
