Rich�s Almost Famous Barbecue Sauce

� cup Celery, chopped
� cup Cilantro, chopped
1 large Sweet Onion
1 Bell Pepper
� cup Roasted Garlic, minced

Pulverize in a food processor and then lightly saut� mixture in wok oil.

Add Sea Salt and Black Pepper to taste

Add saut�ed mixture to large stock pot on warm.

64 oz Catsup
� cup Light Brown Sugar
1 tsp Garlic Powder
1 � cups Rendezvous Seasoning
2/3 cup Chili Powder
1 cup Apple cider Vinegar
1 tbs Ground Cumin
1 � 12 oz can Beer
1 tbs Worchester Sauce
1 tbs Tabasco Sauce (or to taste)
2 tbs Red Pepper
2 diced pickled Jalapeno�s
1 tsp Liquid Smoke
1 tbs Tiger Seasoning
1 tbs Adobo Seasoning
1 tsp Basil
1 tbs Yellow Mustard
� cup Lemon Juice or 2 fresh squeezed

Cover and simmer on warm for one hour. Turn off heat and let stand for an hour. Bring back to small boil. Use a funnel and place in appropriate containers and refrigerate for at least five days. Warm up on stove and serve. Good on chicken, beef, pork and wild game, except turkey.
