pickling need refrigeration?

in a discussion with some friends about pickled eggs and pickled deer heart. we boil our hearts whole then slice them, put them in a jar and cover with boiling vineger/ water / spice mixture and seal.the mason jars "seal" when they cool off. I do eggs basically the same way. always left them out on the counter or on top of the fridge until opening. should they be refrigerated before opening or only after opening? I know ive seen eggs at the bar for months on end unrefrigerated but I am more concerened about the hearts.any thoughts?
