Been picking a few tomatoes here and there and enjoying them with breakfast but a few days ago they really came in. Picked little over two bushel between slicers and cherry tomatoes. So we decided to make a batch of tomatoe sauce that can be seasoned at time of cooking. Basically a base sauce for spaghetti, lasagna, pasta sauce, soups, chilli, etc....we bought a 22 quart electric roaster and the cook time, to get the thickness we wanted, was around 9 hours...we washed, cored and removed any bad spots or blemishes. Pictures are below of the process. Because we hot water bath canned them each jar did get
a half teaspoon of salt and half teaspoon of citric acid. 22 quart roaster full of tomatoes, cooked down for
around 9 hours, made 13 quarts of sauce.

Almost sauce and salsa time here. I also make unseasoned tomato sauce. Thats a great idea with the roaster, I think I will try that this year instead of a big stock pot.
Yes! and salsa!...Hoping to roast tomatoes, onions and jalapeño and can some salsa this week or next weekend.
 
Round-1 of salsa last night. Smelled amazing in oven. Roasted at 450.
Next round will be on grill with hickory smoke rolling.

Homegrown tomatoes, white onion, garlic, jalapeño, cilantro, lime juice (acidity) and salt.

After roasting we slipped the skins off and added everything to stock pot then

Hot water bath 20 minutes.

Made 6 pints....little left over went in refrigerator.

Wife makes tomato soup. The grape mini's she eats in salad.

Does anyone do anything to get rid of the seeds? Wife grinds raw mater and that destroys most of the seeds but to get the rest she strains them and this is time consuming and a lot of work.

Any ideas that work?

You can run them through a food mill and catch many of the seeds or companys like Weston make electric tomato strainer and sauce makers.
They also make juicer attachments that go on the end of the Kitchenaid mixer.
 
Today was roasted stewed tomatoes. Cored, washed, blanched, cooled, slipped skins and loaded into roaster pan for 2 hours.

Be good in soups and chilli this fall and winter.
