This is one I recommend to the "under 100" crowd.

Victorinox Fibrox Pro Chef's Knife, 8-Inch Chef's

If your wife is serious in the kitchen then I'd recommend spending the extra money and your wife gets a knife that will last her the rest of her days.
Thanks MoonBuzzard!

My daughter's 16 and has limited funds, I think this might be a good fit.

Sorry, that Henckels is stainless.

This one is Carbon. Mrs. TAFKAP needed a knife for one of her classes a couple years ago, and she got one from this brand on Amazon. It's held up well and has a great feel.

Amazon product ASIN B08CZM5B8Q

No problem.

TafKaps post ^^^ brings up a point worth mentioning and that's length of the blade. My workhorse is a 7" chefs blade but I have shorter and longer blades for specific task. Might want to find out what length she uses most often and what she's most comfortable with.
