About 18 pounds of pig after 2 hours of hickory and an hour of apple wood smoke. Going in the oven for a slow overnight cook.

The house will smell amazing tomorrow.

Yep....before they closed, did you ever have the BBQ omelette at Cockadoo's downtown? It was fantastic.

No I didn't. Call me crazy but I have not found BBQ that really blew me away in Memphis. The last few times I wanted BBQ I did it myself.

The BBQ wasn't anything mind-blowing...but the concept of an omelette with BBQ and sauce was out of this world.

My buddy at work ate that omelette nearly every time we went there for lunch (5 or 6 times I guess).

I hated that they closed, because I really liked their food.
