fat to meat ratio ?

making deer sausage and for get what is the pork fat to deer meat ratio ? say for 5 lbs of breakfast sausage ,, thanks

add least 1 lbs & maybe closer to 2 lbs,i try to make mine as lean yet hold together & not have to add any oil.i have tried bacon & pork shoulder to add the fat content,cant never remember to save just the fat .got enuf seasonings to make 50 lbs,only lacking the deer ,mix up a batch & fry 1 patty,see how it turns out,keep adding it in 1/2 lbs & frying til you get it how you want it or until you eat it all

We do 5 lbs. of Boston butt or pork trimmings to 20 lbs. of deer meat.

I use 6 lbs of venison and 2 lbs of pork fat when I make my breakfast sausage. The recipe I use only makes 8 lbs.

We use 2 to 10 ratio. just depends on how lean u want it
