On my fishing trip a couple of days ago I caught 2 drum this size and thought I would give them a shot. Since it is a smaller drum I decided to clean it like I do bluegill...gut it, cut the fins and head off, and just take the scales off, so the bones are still in it with the fillets.

Mixed flour, eggs, and lemon pepper in a bowl and put the fish in it to be fried. After the flour turned dark brown I decided to eat it.

It was actually good, yes eating around the bones seemed to be harder than other fish, especially towards the tail end (just follow the ribs like you do other fish and the meat will fall off the bone), but the meat is actually pretty good. I've never had redfish, so I'm not sure what to compare it to, but if I catch more, I will keep them. Closest comparison to me is probably bass.
