I got 5 circle cut 6-8in backstrap going in marinade and will be stuffed with cream cheese, onion, bell pepper, black pepper and some bread crumbs then wrapped in bacon. couple of back straps will be seared in iron skillet and finished in the oven at 500 to med.

Not a good picture but you get the idea. Marinated for 18hrs, stuffed with cream cheese, onion, bell pepper, crisp bacon, spinach with 2 wrapped in bacon and one naked. Cooked in the oven to IT of 140. I have 2 inner loins and a 6in piece of backstrap (also marinated), I will grill tomorrow. Think Im done cooking/smoking this week.

Big thing I learned from these loins, I smoke alot of whole pork loins and generally I had just trimmed a seasoned then smoked and put in vac bags. Having done the circle cut(which I had not done before) on these deer loins and stuffing, I will now do that to some pork loins. Maybe change the stuffing some, but circle cut stuffed pork loin yep going do it.
