Scales on, high heat, favorite seasoning, baste with melted butter, squeeze of lemon when done.
so you dont flip it then right?
Correct. Scales down on the grill. Eat with a fork leaving the scales and skin behind.

Only after the COASTAL CONSERVATION ASSOC got involved to ban inshore commercial fishing.
Now if they can just get rid of the pogie boats… last time I was there it was a sad sight to see the amount of dead redfish that were bycatch from the menhaden guys.
