2 lbs ground beef (fat drained)
3 cans mixed vegetables
1 can black eye or purple hull peas
2 cans tomato sauce (15 oz)
1 quart chicken stock
1 large sweet onion, diced
1 celery stalk(if canned vegs dont have them)
1/2 or small bell pepper
salt and pepper to taste
2 tablespoons sugar (taste and if still acidic add 1 tbsp more)
saute onions, celery and pepper until soft then add everything else. bring to boil and reduce to simmer about 45 min. have the cornbread ready. simple and tasty.
