I watched a show the other day on this.
You split the tail from the underneath and then after you get so far down you can pull it off the bone.
Then split it the rest of the way down the length of the tail.
I didn't see what they did to preserved it though.
I would say either salt it down or maybe submerge it in denatured alcohol.

They actually make a tail puller. This allows you to debone the tail without splitting it. I use a funnel and an old arrow to get epson salt down in the hole. Haven't had one go bad yet...and I've done a bunch of 'em.
