I've been getting bored with wild turkey breast. I love it, but I either brine and smoke it or make turkey nuggets and needed a little adventure. I took half of one breast, ground it up, and mixed in garlic, onion powder, paprika, an egg, Panko breadcrumbs, salt, pepper, and some parsley. Rolled those up and coated in breadcrumbs before frying and tossing in some buffalo sauce. Nice and different. Next time I want to make a Japanese type sauce to coat them in. Just a nice change.

Breakfast this morning was fried crappie, cheese grits, and jalapeño hushpuppies.
