Spatchcocked bird over roasting pan of water, 2 sticks of butter, 2 oranges, 1 apple, 1 head of garlic.
Bird is sitting on a rack over the pan. The reason i did this is 2 fold. First, to keep the bird off of the hotspot of the smoker. Second, to hopefully keep the bird moist.
We'll see how it goes.
