Here you go Spur. A buddy of mine that is a Chef at a restaurant in Oxford MS just posted this a little while ago. Now how you put it all together I have no idea but it does look pretty incredible. The guy is a helluva chef for sure!


Wild Striped Bass, Pearl Cous Cous, Ratatouille, Creamy Citrus Vinaigrette.

Do you guys cook them just like crappie or bream, or is there a tip / trick I need to know?
I cut the fillet lengthwise and remove the lateral line. After a soak in buttermilk, I cut those pieces into basically crappie sized fillets, bread and deep fry. However, I am a true southerner, I like everything breaded and deep fried!
