I usually smoke my quarters at 250 for 2 hours give or take,internal temp of 165. I think I'm going to try 300-325 degrees with no water and try for bite thru skin today. I brine them for 6 hours in kosher salt and brown sugar and will use cabelas poultry rub.
My question is will 300 give me bite thru skin or should I bump my heat to 350
