Risotto

What's your favorite risotto? I love making it and have tried it several different ways. Just wondered what everybody likes.

Mushy risotto never happens in my house. Every time I get something like that in a restaurant, I always send it straight back.

I'm just saying that mushrooms make a risotto to me. Mushy or not mushy doesn't matter. But a good risotto has mushrooms.

Right. I like that and, crab, lobster, shrimp, and scallops. I also like different vegs mixed with it.

Love risotto, one of my favorite things to eat. Best for me is Italian sausage and mushrooms; add a bunch of parmesan cheese once plated. Finally found an Italian sausage mix for my venison last year that I really liked. Ran out of the 25 lbs I made about 2 months ago. I use about 1/2 lb of sausage every time I make risotto; so that shows how often I make it.
