Had another low quality brisket from a calf we killed last winter. The second piece fit perfectly over the thin area in the larger piece so I layered it up to sorta mock a better quality cut and went to work. Wrapped and stuck it back in at 5:15. It's almost supper time!

I took a 1500 lb wagyu calf to the processors last week. Can't wait to get my hands on that brisket!
 
I been known to fold over the flat to keep same thickness but I will now cut it and grind for some really good burger. Its rare that there isn't a skinny end
