Spring time meal for us. Every opening weekend of turkey season we do a crawfish boil and make jumbalaya. 30-60 lbs of crawfish dependent on the crowd size and a big pot of jumbalaya. Can't wait!Nicely done! I need to make gumbo one more time before the weather warms up. It's definitely a cold weather food to me.
