Weather been terrible down here past week, but with all the rain we've had, I suspect the salinity is going to plummet next week, so I decided to brave the small craft advisory warning and fish the Lee side of the marsh. Couldn't find any keeper trout, but caught 4 flounder including this 21in er! Lost another one that was 18 or so right at the boat 😞.

Good quick trip, having surf and turf for supper tonight!

Crazy how little waste there is on a flounder after you fillet them!

In a river hopefully!
Such skills with a knife….. ha! Was that a Bard-Parker #10 blade?

The Dockside Restaurant in Beaufort does a whole scored flounder brought out on a platter in an Asian sauce. Outstanding! You just pick the meat off at the table.

One of these days I'm going to learn how to leave the entire fish intact while fileting out the bones to stuff the meat. But tonight, it's baked flounder fillets and NY strip
