I have my first ever batch of Jerky marinating now. Since I don't have a dehydrator and I am going to use my oven on the lowest setting with the door cracked, does it matter which rack I use? I plan on putting a drip pan at the bottom then hanging them from the racks using toothpicks. I see a dehydrator in my future though!
 
I nearly caught the house on fire doing this once.. all the marinate came out of the strips on to the heating element in the oven.... first smoke then fire... my wife was not very happy... I bought a dehydrator..
 
I've done it in the oven several times now with good results. Most recently I removed the top oven rack and stacked as many as 4 cooling racks like the one in the top right of the picture on top of each other to maximize space. I think I squeezed 4 pounds of (pre-dried) meat in there.

Wood toothpicks is the best way, the metal skewers get way too hot. I wonder, I am seeing deep in my memory bamboo skewers, those would work.

Best of all, a grinder, a shooter, and a dehydrator. This, from a guy who used toothpicks for 30 years.
 
y'all cheap skates need to buy a dehydrator- 25.00 off ebay or 29.00 from walmart. you will save money on electricity and not burn your house down
