Orange brined smoked goose

I brined some Canadian geese given to me from Colorado yesterday and just pulled them off the smoker. Absolutely delicious! These geese have been frozen since early October so I wanted to do something with them that would ensure a juicy goodness.

My brine was simple;
-1 can of frozen OJ concentrate
-1/2 cup of brown sugar
-1/2 cup kosher salt
-1 gallon of ice

I let the goose (probably around 5 lbs) brine for 24 hours then put it on the smoker over a mixture of hickory and mesquite chips. Smoked for close o 2 hours this evening, extremely cold so I let it go longer. Came out to a perfectly rare, juicy and flavorful.

I also made a side of Quinoa salad, this is a awesome healthy side.

Quinoa salad;
-1 cup cooked quinoa
-1 cup blueberries
-1 cup chopped raw kale
-1 large lemon (zest and juiced)
- kosher salt and fresh cracked pepper
Just mixed this all together, I mix blueberries last so they dont mash.
