I am providing Christmas Breakfast this year for the family. I need a fool proof way to make something good with the turkeys I harvested in the spring. What would be an appetizer or something that I could make as a sampler of Tennessee wild turkey. Thanks J
 
Being as you stated it was breakfast..............how about taking some of the meat, run it through a grinder and make turkey sausage as one dish, served up with eggs and homefried taters.

OR

Chop the breast meat up, add mayo, celery, onion, dried cranberries, chopped walnuts and make a light turkey salad to serve with bagels, hardrolls, crackers and assorted cheeses. Don't forget to slice up some extra sharp chedder.

OR

Turkey fajita's (My kids love to eat the leftover fajita for breakfast) I personally think they are better the next day and rewarmed in the oven.

I make them ahead of time, place in a large baking pan. The next day you place extra shredded cheese on top and place in oven to warm through, serve with salsa and sour cream.
