In oven at 200 degrees, at 41 minutes internal temperature was 124. Let rest for 20 minutes and then quick seared in cast iron skillet high temp.
Air fryer veggies.
Red Wine Chocolate sauce for the filet

Wow! That looks great! Would like to see the roast results as well when you do the next one. Tough to do these days when inviting a crowd is frowned upon.
I keep detailed notes. My prime rib is done this same way. It takes 6.5 hours for an 8 pounders prime rib. Once I went the 200 degree method I constantly keep over 95% of meat at almost perfect "Medium rare" plus my detail notes keep me on a decent time frame for serving.
