Iv'e always heard and read, that sapling maple leaves were a preferred deer food source. Is that true? Also, I haven't heard or read about deer eating the helicopter seeds from a maple. I always guessed they might be eaten though.

They will browse on tender maple shoots fairly well in my area. Both rubrum and saccharum. Never have seen or heard of them eating the samaras though.

Maple shoots and leaves are preferred by deer. However, maples are a shade-tolerant species that will quickly grow out of a deer's reach and will also out-compete more desirous trees.
