I have been playing with my knight lk93 and think I have a good load. I am using 250 grain sabot and only 80 grains 777. My grouping at 75yards are good. Would you hesitate to hunt with that light of a load. Longest shot at my place is 65 yards

Think about it like this,,,,

That load is as fast or faster than a 44mag 240gr. Its faster the a 45LC 250gr from a carbine or Contender +P type load. Those loads a plenty lethal for deer at 65 yards.
 
It wouldn't bother me a bit to hunt with that load out to 100yds. Years ago my cousin was shooting loose Pyrodex and measuring with a little brass powder measure that was nearly impossible to read the lines on. We used my powder measure and used it to adjust his for 90gr. It got knocked to 60grs some how between shooting at the range and opening morning. He loaded it up opening morning with the 60grs and a XTP bullet and dropped a deer in its tracks at about 30yds.
 
I wouldn't hesitate to go lighter, if that is what the gun wants. My White likes a 70gr load pushing a 460gr conical. Every smokepole has a sweet-spot of powder-load and projectile weight--it's all about experimenting and finding that spot.
