I started grinding my own meat this year and making jerky. I have been using the store bought pks but I have not found one that I like as much as when I was making my own jerky by cutting it off the bone and marinating it my self. When I cut it up I normally make a wet marinade and that would not work with the ground meat. I need to make up a good dry spice seasoning but other than seasoning salt, pepper and some other spices what else works good? What do you add for the cure for the meat?
 
I use the stuff from Backwoods Seasonings and have not been able to make any myself I liked as well. I too make only ground meat jerky. I did this batch Tuesday. It was pretty good.

I used some of the Backwoods and add a little garlic powder, black pepper, onion powder, and seasoning salt. That is the best I have come up with. It is good but not as good as some of the liquid marinades I use on meat I cut up. I guess it is just 2 different kinds of taste and that is just how it is. I still have a few whole shoulders in the deep freeze I will have to get one out to cut up.
