I found out 10:00 last night that they canceled my flight to Guatemala. A volcano erupted and is blowing ash all over by the airport. Now I am going to have to wait till the fall after my wife has the baby to go .

That stinks man. atleast you didnt get all the way there and it happen and your stuck there for a while.
Go down December - march. I was told in Costa Rica that that is the best time there. It should be similar in Guatemala. They told me you get so tired from reeling fish in you just don't want to reel anymore in when you do hook up. This may have been a blessing in disguise.

I agree with the previous post - blessing in disguise. Fall will be closer to prime season (though winter is best). You also are less likely to have storms in the fall. This time of year, even if the storm is not right on top of you, it can make the seas awfully rough from several miles away.
