I would assume that most of you are also deer hunters. Which, in your opinion, is more difficult to successfully hunt, a longbeard or a mature buck?

Mature buck much much much more difficult to hunt and kill. Longbeards(2 year old and higher) are much more numerous, are out and active all day, gobble their fool heads off during the spring that marks their location, come to any reasonable facsimile of a turkey sound, and think a pop up blind is a haybale! Their vision is fantastic and that keeps them alive as they are pretty much dumb as a rock otherwise. Having said that i enjoy hunting them and am thrilled when i make a kill. Mature bucks-fewer of them, mostly nocturnal, 4 years old or greater so they have learned volumes about hunters, dont vocalize continuously, will move somewhere else if disturbed, and have a highly developed sense of smell. No contest.

Deer, but turkeys can be much more frustrating at times. An AL mature public land gobbler is a different story, those dudes are tough!

The simple answer is a mature buck, mainly because there are a lot less of them.

However, a mature buck to me is over 4 years of age, and using the term longbeard means anything from 2 years old or older.

Turkeys can be incredibly easy to kill or impossible also unlike deer they yell and scream to let you know exactly where they are.

Bucks do dumb things during the rut which makes killing one pretty dang easy if you know what you're doing to be honest.

But based on populations of each the turkey is definitely easier because there are so many more of them than mature bucks, especially in this state

I would agree with this.

I know of several people who have killed 100+ adult gobblers. I know of very few people (none personally) who have killed 10+ truly mature (4+) bucks.

Mature buck is harder for sure. But I'd rather kill an average 2 year old gobbler than 100 Boone and Crockett bucks.

mature deer no doubt 4.5 year old and older bucks are very hard to out smart and kill a mature long beard aren't easy to kill but are easier to kill imo a lot to do with the population but many other factors also.

Mostly luck involved in killing a mature buck.

Very, very few hunters are successful at taking mature bucks on a regular basis.

I do love getting on a season wrecker every spring though and spending the rest of the season's waking moments trying to figure out how to battle him.
