Is there one fruit better for deer health and growth? Let's say
apples vs pears. Or are they all energy calories and it really
dosen't make any difference.

Im not sure one would provide any nutritional benefit over the other. They are both going to be ripening in the same time frame. High in sugars for quick energy. Not ripe at a time for antler growth or lactation for the most part. I know pears have more protein but neither one has a full gram so whats it really matter.

its just candy for them I think, but someone could become a millionaire if they could get a pear/apple/ whatever to drop fruit in late December
They already exist! They tend to be apples that dont taste very good to us but they do exist and deer will eat them. Ed Fort supposedly has pears that drop in December as well but I havent actually seen it. If you want apples that will still be on the tree during that time period then I will give you some Fall 2011. I just happen to know where a mother tree is, holds small green "cider" apples :) It'll just take awhile to get them to maturity even on MM111 rootstock but you will starting from a twig basically.
