I was going to make this tonight and was wondering what you guys use for a coating? Also, do you dredge in milk and eggs before the coating? First time trying this.

I use cornmeal, my uses flour and we both use milk(what ever is in the fridge). Just remember, dry-wet-dry.

I keep it simple and just use cornmeal with a little salt and pepper thrown in. Any oil is fine but sometimes I like to throw healthy out the window and use shortening or lard in an iron skillet.
