I was going to make this tonight and was wondering what you guys use for a coating? Also, do you dredge in milk and eggs before the coating? First time trying this.

I use cornmeal, my uses flour and we both use milk(what ever is in the fridge). Just remember, dry-wet-dry.

We use a mixture of one egg and buttermilk (dip) and roll in cornmeal. Then use canola oil for frying. Can't beat it.

That is the one thing that my Mom used to make that I long to have on nearly a daily basis.

I keep it simple and just use cornmeal with a little salt and pepper thrown in. Any oil is fine but sometimes I like to throw healthy out the window and use shortening or lard in an iron skillet.
