Any chance any of you guys ever tried to slice fish with a meat slicer? Rockfish will be up soon and I have always filleted the fillets. With the texture of the meat I wonder if a slicer would work?

Freezing it first might help.

Use a slicing board and electric knife. Almost as fast and easier to clean up.
You can easily make one of wood for whatever thickness you like your filets.
