I'm fairly new to deer hunting and am going to be processing my own deer this year (with a little help). I want to try to make some jerky and was wanting to know the best way to do it, which cuts of meat to use, and things like that. I don't have a dehydrator yet, and might not even do it this year, but I was just curious about how to go about it.
 
i love deer jerky! i grew up with my grandfather making deer jerky like year round! now that i process my own deer, i continue the tradition! i start out with picking the type of merinade i want. well it doesnt exactly have to be marinade. any flavor. my favorit part ti make jerky out of is the back strip, but my grandfather always use the hind quater! which also good! but cut in about 4" stips 1/4 inch thick. as much as you want. then i like to marinade in zip loc bag for 6 to 8 hrs. and then put on the dehydrator for about the same time! i like 8hrs! keep it longer if you want it dryer. good luck, and good eating!
 
I just sat down at the computer after putting a batch of "slim jim" style jerky in the dehydrator. For that I mixed an equal amount of ground pork into ground venison (about two pounds total meat)...got the slim jim mix from Academy Sports and used a jerky shooter.
For regular jerky use any cut you want..just make sure to slice it really thin. I leave mine in a marinade overnight then into the dehydrator in the morning.
If you're looking for a decent, low cost dehydrator, Nesco makes a good one for under $40.00.
