Anyone ever tried to make deer bacon?

I ate some this morning, and I will not be able to rest until I have a freezer full of it .. It was that good. One of my Webelo's dad gave me a package that his processor up in Illinois had done for him.


Making my own is not an option, although I did find instructions here:

I did find a processor that said he could mix it, but then it was up to me..

Mix it?..................How do you mix bacon? It is slab meat from the outter ribs & belly area.

Ok, you can call it sausage.

To me, it looks like bacon, cooks like bacon, tastes like bacon..

I'll call it bacon :)

Read the instructions,from the link in my original post. From what I gather, its smoked "chunks" of meat, sliced thin into bacon strips.

It does remind me of jerky strips..

Even my wife,who does not like deer, absolutely loved this bacon.
 
I'm going to make some using a mix of cure and dark brown sugar rubbed over a roast. When it's done curing I'll smoke it, slice it, and fry it up like regular Canadian style bacon. I use the same treatment on pork roast for buckboard style bacon. I prefer the whole muscle style to the ground.
 
gtk, i am completely excited about this. It combines two things I love... Bacon and Smoking

When i lived in Illinois I had a processor that would do this for me.

Did you order the spices from the Curley's guy he mentions in the article? I wonder if there is any place around Chattanooga that sells the seasoning mix.
