Deep Frying Dove Breasts

Has anyone tried deep frying dove breast... I have 30 dove breasts that are frozen in Cajun marinade and I was thinking of frying them when my friend comes back up in a few weeks........ Thinking of letting them marinate for about 48 hours then battering them & frying them in my turkey frier.....
 
There is no skin on them so I am curious if I should inject some of them with a half butter - half marinade solution before dipping & frying..... I will have to try some both ways...
